This pancake mix is truly a product of Northwestern Ontario. We joined up with Jeff from Brule Creek Farms, Northwestern Ontario's only flour mill, to combine our maple sugar with his grown and milled hard red spring wheat flour. These traditional pancakes would be at home in a 1920's lumber camp in the Dog River-Matawin Forest, on your next canoe trip to the backcountry or on your dining room table on a wintery Sunday morning to feed your hungry kiddos.
 
Jeff is a proud grower and says "As part of our promise to our customers, we adhere to heritage methods that use a little bit of technology and a lot of tradition, intended to make milled products that are as close as possible in flavour and nutritional content to unmilled grain. We refrain from using any additives or preservatives in our products to make them as natural as possible."
